The following Recipe for Ground Pork Sandwiches is another family favorite, especially when we have large gatherings. This was one passed down from three generations. It was a famous sandwich in Muscatine in the 60’s at a local restaurant prepared by my Grandma and we have enjoyed it for years after.
Where This Recipe Came From:
My Grandmother, Agnes Beck, worked as a cook at a restaurant in Muscatine, Iowa called the Rock-a-By many years ago. While she worked there, she brought an old recipe that she made for many years. She was married to a man of Danish descent, so I assume there was a lot of influence there. This recipe for ground pork sandwiches is always a hit for large group buffet style dinners when my large family gets together. It is easy to make with few ingredients, but delicious!
Ingredients for Ground Pork Sandwich Recipe:

- 3-4 lb. boneless pork loin or pork shoulder, depending on the number of people I am serving.
- 2-3 Bay Leaves
- diced onions
- diced celery
- chicken broth (1/2 cup)
- Garlic powder, salt and pepper
Directions for Ground Pork Sandwich Recipe:
- Dice up the onion and celery
- Start with room temperature pork, dry with paper towel.
- Season with salt, pepper and garlic powder
- Sear the pork (I use a slow cooker that you can sear on the stove and move to a cooking base.
- After seared, cover part way with water and broth
- Add onion and celery and bay leaves
- Cook in slow cooker until tender (times vary based on your slow cooker)
- Remove the bay leaves
- Cut up the pork and place in a food processor along with the cooked onions and celery.
- Process until fine and place back into cooker with as much broth needed to make it moist.
- Serve on a bun with your favorite condiments. (We like a crusty bun and dill pickles and onions.)
I like to accompany these sandwiches with my cheese Potatoe casserole, Cole Slaw and baked beans.
