Recipes – Spanish Rice

This Recipe for Spanish Rice is a family favorite, especially when it is made from my recipe. This recipe is not the traditional Spanish Rice Recipe. We are a family that loves the flavor of beef added to our sides, therefore, I got a little creative with the traditional. There are never any leftovers from family gatherings of this Spanish Rice Recipe.

Connie’s Spanish Rice Recipe:

Ingredients:

  • Ground beef (I use 93% lean)
  • onion
  • Minute Rice
  • green pepper
  • tomato juice
  • beef broth or bouillon
  • cumin
  • chili powder
  • garlic powder
  • onion powder
  • black pepper
  • Lawry’s seasoning

Instructions:

Sautee above and season with black pepper, garlic powder, onion powder and Lawrys

I do not drain oil unless there is a large amount.  I believe this helps to further season the rice

Add Minute rice, tomato juice, chili powder, cumin and Lawry’s and beef broth (just enough for flavor), or a bouillon cube.

Then stir it all together. 

Connie’s Extras To Basic Spanish Rice Recipe:

These are those little extras that make my family recipe special to my family.

When the rice starts to soften, I add some optional things

A small squirt of yellow mustard, about 3 squirts of ketchup, about 2 tsp. of brown sugar and

about ½ cup spicy V-8. 

Depending on your families taste some other options would be can of diced green chilis, or a can of

diced jalapenos.

Quantities of above depends on amount you want to make.  For our family meals I use 2 lbs. of ground beef 1onion and 1 green pepper and one small box of Minute Rice and a jar of tomato juice.
